There was a particular look in Olivia’s partner’s eyes when she picked up pickling in her 4th year of medical school. It was kind of a “oh not this again” look. So far, Olivia has managed to keep the pickling to a bare minimum, just-enough-for-us-to-much-on amount and is not making any for friends and family and eventually strangers. Yet.
There’s basically two steps to pickling: 1) Chop up a bunch of the vegetable you want to pickle and put it in the jar with some flavor elements (dill, garlic, etc) and 2) Add in boiling pickling liquid (vinegar, water, sugar, kosher salt, and sometimes flavoring).
